Maple Baked Apple Chicken


I made this tonight and we had a friend over. It was great, and really easy to make. The apples set it off just right. mm mm... definitely going to make this again.

Serving 4

4 small boneless skinless chicken breast halves (1 lb)
1/2 cup sliced onions (I used red)
2 red cooking apples, sliced
1/2 cup maple-flavored or pancake syrup
1/3 cup zesty Italian dressing

Preheat oven to 350 degrees. Spray large oven proof nonstick skillet with cooking spray. Heat on medium-high heat. Add chicken; cook 3 min. on each side or until lightly browned on both sides. Remove from heat.
Place onions on top of chicken, surround with apple slices. Mix syrup and dressing; poor over chicken.
Bake 20 to 25 min or until chicken is cooked through. Spoon the rest of the syrup mixture in skillet over chicken just before serving.

Hint: If you don't have an oven proof skillet, simply cover the handle of your regular skillet with several layers of foil before using as directed.
